Looking for an easy on-the-go energizing snack? These cranberry lemon bites are a tasty treat that you can store in your fridge for up to a week! I usually grab them for breakfast or on my way out the door before school.
Prep: 15-20 mins
Makes: 14-16 balls
Ingredients:
2 cups rolled oats
2 tbsp melted coconut oil
2 tbsp maple syrup
½ tsp vanilla extract
1 tbsp lemon juice
2 tbsp lemon zest
4 tbsp milk of choice
1 tbsp chia seeds
¼ cup dried cranberries finely chopped
Instructions:
- In a food processor or blender, pulse together the rolled oats, melted coconut oil, maple syrup, vanilla extract, lemon juice and zest, and milk. Blend well until incorporated.
- Move mixture to a bowl and mix in the chia seeds and cranberries by hand.
- Form balls with your hands! Roll into 14 to 16 equally sized balls.
- Chill in the fridge before eating!
- Storage: Store in the fridge for up to a week!
