Make fun of me all you want; these carrot dogs are spectacular. As a vegan, I don’t love to eat meat alternatives just because they contain so many preservatives and can get expensive. These carrots, marinated to perfection, will make an excellent alternative to vegan hotdogs at your next family barbecue.Â
Cooking Time: 2 hours. Serves: 6
Ingredients:
1 cup vegetable broth
1/4 cup apple cider vinegar
2 tbsp soy sauce
1 tsp liquid smoke*
1 tbsp paprika
2 tsp mustard powder or ground mustard seed
1/2 tsp garlic powder
1/2 tsp ground coriander
1/4 tsp ground black pepper
2 tbsp olive oil
6 medium carrots, peeled and cut to the length of the buns
*You can find this in the same section of the grocery store you can find Worcestershire sauce and/or BBQ sauce. Add this to any recipe you want to add some smoky flavour to.
Method:
1) Pour all the marinade ingredients in a baking dish and whisk together to combine. Add the carrots to the baking dish and cover with foil. Let sit for as long as you can, but at least 30 minutes.
2) Preheat your oven to 425 F and stick your carrots in the oven for 20 minutes, still covered with foil. Then take off the foil and flip the carrots over so the other side is bathing in the marinade. Roast for another 20 minutes.
3) Grill up these long, orange veggies until slightly charred.
4) Serve on toasted buns spread with some pesto. Top with pico de gallo-style salsa and caramelized onions for the perfect eating experience.
