The Cascade Kitchen: Peanut Sauce

This peanut sauce is so good and easy to make that you’ll never again have to buy jars of it from the store. This sauce is great with Asian-inspired dishes: spring rolls, dumplings, stir frys — but honestly this stuff works for everything. If I want a really quick meal, I’ll boil up a package of ramen or rice noodles, sauté whatever veggies I have in the fridge, and top it off with this sauce and a bit of cilantro. Always keep a jar of this in your fridge, and thank me later.

Cook Time: 7 minutes. Serves: approximately 2 cups of sauce

Ingredients:

1/2 cup smooth natural peanut butter

1/3 cup coconut milk

2 tbsp hoisin sauce

1 tbsp tamari or soy sauce

Juice of half a lime

2 tsp brown sugar or coconut sugar

3 tsp chili garlic sauce

Method:

1.Simply add all ingredients to a bowl, mason jar, or the container of your choice and stir until you get a smooth, creamy, dippable sauce. Add more or less coconut milk as needed to get to the desired consistency.
